Our classroom instruction immerses students in core foodservice knowledge through four key texts: Culinary Math, Nutrition, ServSafe, and a hands-on Classroom Cookbook. Students build strong foundations in food safety, kitchen math, nutrition, and recipe execution. Structured lessons, guided discussions, and practical exercises prepare them to earn their ServSafe Manager Certification by program’s end.

Students gain practical experience in two fully equipped kitchens, applying skills like food prep, knife work, cooking, time management, and teamwork. The hands-on training—with long hours and physical demands—replicates a professional kitchen, building their confidence and competence for the culinary industry.

Students gain firsthand experience in menu planning and large-batch cooking to plating, service, and event setup. Working alongside staff and peers, they learn the importance of professionalism, efficiency, and teamwork while contributing to actual catered events that serve the community and support the mission of REfire Culinary.

Our newest curriculum component introduces students to sustainable food systems through hands-on learning provided by our partner, The Dwellings. Students gain a basic understanding of where food comes from and how to grow it responsibly, while also learning how to incorporate fresh, local ingredients into their cooking. This connection to the land strengthens both culinary skills and sustainability in the kitchen.

REfire Culinary understands the unique challenges faced by people reentering the community after incarceration. Our in-house resources are designed to provide stability and support throughout the transition. We tap into local partners for resource assistance, provide case management, and job/housing referrals to help students navigate reentry, address personal barriers, and build a path toward long-term employment. These services create a strong foundation for success—both in the kitchen and in life.
